Here is the classic bad clean where only the area behind the filter has been cleaned in a circular motion and the rest untouched.

Regular and thorough maintenance of the hood and ductwork exhaust system will help to ensure a secure environment for cooking. A system that is safely working provides optimum performance and will lead to working environment that’s cooler, cleaner and more productive for the staff.

Here are some photos that my opposition doesn’t want you to see. I have put together a selection of before and after canopy and fan photos.

The Classic Poor Canopy Clean

You don’t have to be a rocket scientist to clean a commercial kitchen canopy; you just have to do it properly. In my three years working in this profession it still amazes me today how 95% of the kitchens I inspect are not cleaned correctly. It appears that most other companies only clean the back wall directly behind the filter and leave the rest.

This is the classic back wall clean. Remove your filter and upon first glace the canopy appears to be clean until you look up and behind

This photo represents what I see on a daily basis when I inspect canopies on the SOUTH FLORIDA Coast and INLAND. As depicted in the photograph, if you remove your filter and take a quick glance you may be deceived into thinking that the canopy is clean. In fact this photograph was taken two days after the whole system was apparently cleaned. Lets go to the next photograph to see the quality of work that was performed.

Not keeping your fan clean is the fastest way to blow it up

This is what the fan looked like when we first inspected it. Although the canopy had regularly been cleaned the fan was never touch although it was easily accessible.

This is an example of gross neglect that we see all the time

Upon closer inspection we can see the gross accumulation of grease that would greatly reduce the life span of the electrical system, not to mention the fire hazard that it presents.

After some considerable work the barrel fan is now clean

After some hard work by our team the barrel fan looks brand new again, reduced fire hazard and an extended life span.

Upper Canopy Neglect

This Canopy has never been cleaned properly since new

This is a venue that turns over $50,000 a week in food. Although cleaned on an annual basis, the previous cleaning company has neglected to perform a proper clean.

It does take a lot of hard work to get a canopy back to bare metal

With some considerable effort we scrape away the years of neglect.

After some substantial work the canopy is back to an acceptable standard

The upper canopy is now back to an acceptable standard and will be maintained on a six month maintenance schedule.

Internal Ductwork Neglect

Upper ductwork and ducting is an area that is constantly neglected. It is often never cleaned. Out of sight out of mind. We gain access to that area by cutting access panels and climbing inside.
